Having the kids back at school will no doubt come as a relief to many parents after the long summer break, but getting back into the routine of preparing packed lunches surely won’t. If your family follows a gluten free, dairy free or vegan diet, it might feel like even more of a challenge. Well, we’ve got some great ideas to keep your packed lunches hassle free, healthy, and above all tasty!
Gluten Free Pasta Salad
Creating a pasta salad will not only cover a few lunches in one prep session, it’s sure to be super filling and keep those hunger pangs at bay all afternoon. Simply cook up and cool your gluten free pasta of choice, then add whatever vegetables, herbs or other favourites take your fancy. Simply add a ready-made salad dressing and you’re good to go.
Sandwiches are the mainstay of many a packed lunch, given that they’re hassle free and only take a few moments to prepare. Peanut butter spread is always a firm favourite, along with a chocolate spread like this Go Vegan Organic Gluten & Dairy Free Chocolate Hazelnut Spread. That’s fine for the kids (and adults too!), but what if you want something a little more grown up? Try perking up your lunchtime with a nut butter spread and crispbread or crackers. Choose from mouth-watering combinations like raspberry and cashew, or gingerbread and almond.
Jelly is another lunchbox favourite that can be prepared in batches to last for the week. Our gluten free and vegan jelly range from Just Wholefoods comes in a variety of flavours and is free from artificial colours, flavours and sweeteners, so you can be sure it’s totally natural. Why not add a few pieces of fruit for an extra twist?
These Grab & Go wafers from Eskal are individually wrapped in lunchbox ready portions, so ideal for snacks when out and about.
For an extra special treat, anyone would be happy to see a dairy-free chocolate bar from the Mini Moos range in their packed lunch!
